"Opening its doors in early 2013, chef-patron Duncan Ray's first solo venture in a highly promising career has certainly raised the bar for the Brighton and Hove dining scene. Tucked away in a little side street near the seafront, the setting is an open, light-filled space done out with a bare-bones contemporary look: neutral colours, pale wood tables, rustic chairs, quarry-tiled floors, and fish-related art. As the restaurant's name suggests, the focus is on fresh, sustainably-sourced fish and seafood, and with just 20 diners to attend to, Ray's food displays a high degree of technical skill, with tip-top materials raised by a well-considered creative edge. To start, plump and juicy scallops share a plate with caramelised cauliflower and come sharply dressed with an exciting mix of golden raisin, pomegranate, capers and coriander. Next up, more big flavours come courtesy of a super-fresh slab of monkfish matched with pork belly, carrot and star anise purée, squid and pine nuts. To finish, there's a masterclass in the flavours and textures of chocolate, paired with caramel fleur de sel ice cream, caramel sauce and hazelnuts."
